Ice is used in a wine tasting to keep the white wines chilled until the are tasted. Red wines are supposed to be served at room temperature, wich means the temperature of the wine cellar. White wine is supposed to be served chilled.

In modern societies, room temperature is too warm for ANY wine. When you hear that reds should be served at room temperature, that’s because it’s 62 degrees F in your chateau, not because the wine needs to be warmer. Each wine has its own range at which it’s best, and it is true that as a general rule whites need to be a little cooler than reds, but each wine is very individual (as is your sense of taste and your sense of smell, which also play a part). You’ll have to use one bottle of a wine to see what temperature’s best for the remainder of the case. If you don’t want to do that, I’ll volunteer for you.
