Dry vermouth is about as dry as it gets, try some Italian whites they are pretty dry, pino greggio is sort of dry with lots of flavor
Really, there is no substitute. I was going to say fruit juice, but it’s too sweet (too much sugar). Maybe just water?
Those are added for flavor.
Before I kept alcohol in the house I just omitted them altogether, and added fresh herbs instead.
Dry Sherry. (tio pepi?) The dry sherry would work without the vermouth.
For the white wine substitute (non alcoholic) I would say grape juice! White of course. This can be made to taste a bit drier by adding lemon juice. I am afraid I do not know about the vermouth. I just leave it out – hope somebody else can enlighten you. I do not drink any more and cannot remember what vermouth tastes like – and am not prepared to start again having fought so hard – I am 3 years dry next week! (Applause please!)
