What is a good replacement for white wine?

Vermouth IS a dry white wine. It will work fine. I have done it before.

Yes dry vermouth or chicken stock should work. You can also use apple juice if you have any.
chicken stock works well in alot of dishes. Only way of learning to cook is to experiment with different options. Alot of these recipes call for certain items but it’s only good for that one particular dish. I don’t know about dry vermouth, but I always have a bottle of white wine just in case. Nothing kept over a week and even the cheap white wine works. It’s cooks and makes it better. Good luck
Like you and others suggested, chicken stock is a good substitute and I use a lot. For future reference because most people don’t keep it on hand, white grape juice is also good. There are some recipes where the taste of chicken just might not be right.
Either one would work or add both.
