That sounds nasty as hell with the red wine vinegar try a dash of garlic instead. But just a little.

With an onion, a green pepper and a red pepper, you need more than one tomato. Add a tin of tomato sauce to it and yes, you can add red wine vinegar. If you do, add a pinch of sugar as well.

You could but dont put much in it. Balance it out with a little bit of sugar.

No that is not a good idea. A better idea is putting red wine (not sweet like port but semi dry or dry) or even a dark beer is wonderful in any kind of spaghettti or tomato sauce. I suppose since you already have it in the veggies you can try it but the vinegar may make it have a sour flavor, if it does you could try a little sugar or honey.
