No matter how much cooking you do, a trace of alcohol remains. Some of the alcohol binds very tightly to water molecules, technically known as an "azeotrope" and is not boiled off. So, it depends upon "how" allergic you are to alcohol. A "trace" probably will not hurt, as trace amounts of alcohol are produced naturally in the body during the digestive process.

It depends on the reds that you like, but my personal favorites are Red Zinfandels - a little heavier & meatier, or Pinot Noirs, which are a little lighter. The new syrah and shiraz are really nice, too...you are just going to have to try a few, everyone has different tastes in wine.
You can really do reds with so much food anymore...I think people are moving away from the old red or white rules. Personally, I will take a red with almost anything, over a white.

Sure, many times.

I went winetasting in the area where the movie was filmed a few years before the movie and it was very very quiet and I reallyenjoyed it. But now I understand it is very crowded.

Visiting a winery and tasting its wine in situ is an ideal way to learn about wine.

Merlot by Bogle, it's inexpensive but is really good. Also try a Shiraz by Rosemont. Those two are my favorite. Pinot Noir is much lighter than these two so it depends you.
Not sure how into it you are, but a winery with some friends might be a fun way for you try variety of different wines :o) just a thought.

knowledge of wine first of all, then location location location!! In Louisiana we have several retail wine cellars that are popular some cater to the cigar smoker as well as the wine drinker and another wine/diner serves gourmet sandwiches all day too along with specialty wine gift baskets as her specialty! Dont forget to base your ideas on a clientele that can and will afford your prices. Once you have a base of regualr customers the business will grow on its own by word of mouth!
