Okay, so I have this party coming up and I wanted to figure out which white wine to serve for sipping. I always loved riesling, but it can be too sweet at times. I mean, it probably should not matter since most of the guests are not at all wine-drinkers so they probably cannot tell the difference between one white wine from the other. I just want to serve them that is light. Any ideas?

Also, white wine can stay in the fridge for days and be ok, while red turns to vinegar overnight, or hours if left uncorked. What is it about white wine that makes it so different?
